Satti de Zamboanga

Satti de Zamboanga








Satti de Zamboanga, also called Satay is one of the famous Zamboanga Delicacy composed of grilled bits of beef, hanging rice and the trademark sauce. Here's how to make one: 

 What you' need: 

 ¼ cup of Chili Flakes 











1 ½ tbsp Ginger Powder 

1 ½ tbsp Turmeric Powder 

1 medium size Onion 

1 ½ tbsp Oregano Leaves 

2 tbsp Coconut or Olive Oil 

¼ -½ tsp Shrimp paste or bagoong 

2 pcs diced tomatoes 

¼ cup Flour 

 ½ cup Corn Starch 

1 ½ - 2 cups Sugar
 
1 tbsp Salt 

15g Achiote or Annato Powder (For Coloring)


3 liters Chicken broth 

 ½ tsp Curry Powder

For the meat: 

2 cups of chicken breast or sirloin beef (sliced into very small cubes) 

Bamboo Skewers 


 Marinade ingredients for the meat: 

5 minced cloves garlic

 2 tbsp. sugar 

 4 tbsp. soy sauce 

 2 minced shallots (Violet and oblong version of onions) 

½ Kalamansi or lime Juice 

3 tbsp. oil 



 How to's: 

Step 1. Boil all 3 liters of chicken broth. Gradually pour curry powder upon boiling. 

For the Sauce: 

Step 2. Mix chili flakes, turmeric powder, oregano leaves, onion and ginger all together in a small amount of water (Enough to make it paste-like) 

Step 3. Mix the condiments (annato powder, salt, sugar and cornstarch)in 1 cup of warm water enough to clear out lumps. 

Step 4. In a different pan, saute tomatoes and shrimp paste (bagoong)with oil. Slowly pour the step 2 mixtures to the sauteed shrimp paste and tomatoes. Don't forget to add water to neutralize the thickness. 

Step 5: Pour the mixtures in step 4 into the boiling water and stir. Gradually add the mixtures from step 3. Add water to neutralize the sauce' thickness. 

Keep in medium heat for 20 - 30 minutes (or more). Don't forget to stir frequently to avoid lumps and paste from sticking around the pot. Add water to lessen the thickness of the soup as needed. 


For the Meat: Mix chicken breast or sirloin beef cubes into the marinade mix (Please see Marinade ingredients for the meat)overnight. 
After marinading overnight, skewer the meat. 
Grill the skewered meat for not more than 3 minutes until cooked on each sides. 
Grease with the marinade mix occasionally to intensify flavor. 

Best serve with Satti Sauce and hanging rice.
